Don’t go pay the second floor of the Eiffel Tower. Not worth it bc of the wait to get back down. In fact, go to the Arc de triumph instead for a view

You can avoid the crowds at the Eiffel Tower by going to the Tour Monparnasse. The view is the same but for one thing – you also see the Eiffel Tower.
I also recommend leaving your hotel as early as possible. You can experience the real Paris before the hoards get up. Also, walk as much as possible.
One place that you should go is the Holocaust Memorial which is just behind Notre Dame. It is unsettling, but well worth the effort.
This woman sounds like she is part of the Scottish upper class so she should fit in well in the 16th Arrondissement.
