Nice bike, but do not buy it if you want a flat bar bike. Bikes designed for drop handlebars have a completely different geometry and “reach” from the saddle, slapping flat bars on would completely ruin the fit, sizing and handling of the bike.
Road bikes and flat bar hybrids/mountain bikes also use different sizing systems to begin with. Generally road bikes are measured in cm, wheras hybrids you might see in inches. And any given rider would need a different size in each system.
Drop bars are typically preferable on touring bikes, offering more positions for your hands to avoid discomfort and more options to adapt to different conditions. But you might struggle with rack mounting options on this bike, outside of strap on frame bags for bikepacking.
