I'll probably eventually buy a dedicated gravel bike, probably from State Bicycle Co. because they're just down the street from me. on a whim I converted my Trek Superfly 100 to GRX and drop bars and threw on my Crank Bros Cobalt MTB race wheels.
My first really long ride was last through South mountain weekend riding from Phoenix to Tucson. (and back… 230 miles) along farm roads and through a couple of reservations.
today I took it out and did another 40 mi or so through our local park riding a mix of Street and canal paths plus a little bit of mountain bike trail.
My local bike shop has the Trek checkOUT and I test rode that the other day and my build fits and feels feels almost exactly like the checkout.
so far I'm pretty happy with it

I think this is pretty neat, you should check out r/dropbarmtb
Checkmate, trek. This guy can make his own checkout.
“feels almost exactly like the checkout”
No way. A years old MTB with MTB geometry and 100mm of travel feels like a modern gravel bike with radically different gravel bike geometry and 60mm of travel? Not a chance. I mean, I guess they’re both bikes, so they both feel like… bikes, so I guess that’s the same.
