Was making what I assumed was going to be some simple upgrades for my bike. Started with trying to replace the pedals with some more sturdy metal pedals. Had a real tough time taking the left pedal off. Looks like the factory stock ones stripped the threads on the crank. Doesn't seem like I'm able to get the new pedals on. Do I need to replace these cranks too?

Pedals are hooped but you’ve still got some good threads on the cranks. If you have a die you can try to cut new threads. If not see if your LBS can do it. It should be a cheap little job they can do in 5 minutesĀ
Take it to a shop that has the ability to helicoil crank arms. They might even get lucky and be able to just run a pedal tap from the backside to fix up the pooched threads.
Try running the pedal in from the side with the good threads, sometimes this is enough to sort of re-tap the thread.
Cheap cranks and cheap so it might not be worth the labor but they make thread repair kits that any good shop should have.
The left side is left hand threaded. I suspect that might be the root cause .
