At a total loss here – bike is S valve, but the S on the pump doesn’t fit, however, I can’t get any of the grey pieces to sit correctly either

That’s not a shrader valve (S), it’s a dunlop valve, that’s why it doesn’t fit.
Dunlop valve
The valve is a Dunlop style, try using the presta (smallest/lower) hole on your pump valve adapter.

That’s a Woods valve, some call it a Dunlop Valve.
You need to use a connector thats labelled as fitting a Presta valve ( totally different but the same size of fitting).
