Trying to change chain ring! Took the 8mm bolt off and the crank still won’t come off, what am I doing wrong? Everything I read and watched says it’s self extracting!
You’re missing the crank-bolt-cover (the cover is reverse-threaded), which needs to be installed so the crank-bolt can push against it as you loosen the crank-bolt (with 8mm hex key through the 10mm hole of the crank-bolt-cover). This pushing of the crank-bolt against the cover enables the bolt to push apart the drive-side crank arm (with the chainring) from the crank spindle. Without that crank-bolt-cover, you will just unscrew the crank-bolt, leaving the drive-side crank-arm stuck to the crank-spindle.
Buy one, have it on hand but don’t keep it on the bike if you don’t want to buy one again.

Like the others said, you are missing the second part of the self extraction mechanism.
But you can easily get the cranks off without it. Put the screw back in about halfway, so it’s secure in the threads of the axle but stands out a bit from the hole in the crank.
Now just hit the screw head with a rubber mallet, that’ll force out the axle towards the other side. .

Are you missing the “cap” that screws over the main bolt there. Usually one for self extracting. Check out sram MTB ones
Typically, you’ll need a crank puller to get the chain ring off.
