I'm replacing some parts on an old World Sport Schwinn and noticed the cables for the shifters and the breaks are different. Can I replace them with modern standard cables? Or do I need to go on a hunt for some specific kind.
Should be fine. Both of those look to be a size match for modern replacements.

Yes, modern cables are the same designs as those. Just make sure you get road brake cables.

Yes it should work. If though there was some minor amount of play that was significant enough to affect shifting (very unlikely), you’d probably be better off using some sort of makeshift washer than trying to find a perfectly identical cable.
