Probably not overkill for bike packing, definitely overkill for my wallet.

I love Pinion for touring – not sure on the smart shift aspect of it though. One more thing to charge.

There is no such thing as overkill. It seems like a very nice bike, and if you can afford it you should ride it. In fact, it seems likenit is getting close to perfect:
Internal gears, check
Belt drive, check
Titanium, check
Lots of storage options, check
Varied hand positions, check
Room for wide tyres, check
Gorgeous, check
Edit: apart from my now corrected typos, I see that it also comes with a rohloff. I would get that version instead as it keeps your options open. Rohloff is also availavle with electronic shifting if you’d prefer that over cables.
Personally, I wish I had a hydraulic shifter for my rohloff
