It’s customary for racers to err towards sizing down in order to have less bike weight, and make it up with the stem and extended seat post. You also get more compliance from the longer post and stem, all else being equal. And generally for road biking you want more reach, less stack to produce more aero posture.
So: Can you do it? my guess is probably. Will it be optimal from a road racer perspective? maybe not.

I’m a lanky 6’2″ and my primary bike is a 2021 Soma Double Cross Disc in 60cm, which I am running with a +6deg 110mm stem, and the seat back a bit.
