I'm new to biking (well I biked as a kid), I recently purchased an electric trike and I rode it down to the park not far from my house. As I was sitting on a bench I heard a funny sound almost like air, I look over to see the back tire of my trike slip off the rim. Then it ballooned in size. Does anyone know what could have caused it? I was super careful and pretty slow with using it.

Poor quality tires and rims- you might be able to carefully re-seat it, but it will always be a hazard.
need inspection to determine.
These products are made with a complete lack of attention to quality.
The bead of the tire was not seated properly in the rim before inflating, most likely. Deflate the tire, seat the bead, add a bit of air and make sure it stays in. What PSI did you inflate them to?
What are the makes and models on the rims and tires?
Almost all my tires fit too tightly to do something like that. I had a really crappy bike years ago that did that though. I think I was able to seat the tire well enough not to do it but it was annoying. In retrospect I probably would get better tires instead.
