Help with purchasing Canyon Grizl

It is time for me to buy a new road/gravel bike. I predominantly ride MTB and use road/gravel bike for road rides when there is too much mud in the forest, turbo trainer and occasional gravel ride. Right now I have Kona Private Jake which is almost 10 years old. I would like to get something more modern. Somebody might ask why not road bike but I have a feeling that I get more versatility and more comfort with gravel bike.

My first (and so far the only) pick is Canyon Grizl CF 7. I like it because it has relaxed geometry and it can fit 2.1 x 29" MTB tires.

I have three questions:

1. A fit question, I am 192.5 cm tall, my cycling inseam is 88 cm, and my ape index is +5 cm. Canyon recommends XL and, intuitively, I would chose XL, but when I decrease inseam, in Canyon's calculator, to 87, the recommendation is L!!!!. So obviously, I am on the border. I am not worried about saddle height, but I am worried that bike may be too long. I might try a little shorter stem (60 mm vs 70 mm that is speced on XL) and maybe to push saddle a bit forward. Any experiences of people of similar height would be highly appreciated.

2. I would replace crank with the one from my old bike since it has power meter. And I would also like to put bigger chainring, 46T or maybe even 48T. So the question is whether rear derailleur (Shimano GRX RD-RX822 12s, medium cage) will work and whether there is enough clearance between chain ring and the chainstay.

3. I am not happy with the selection of available colors, so some real world pictures of "Pineapple Gummy" would be very helpful.
