Buying new all-purpose gravel bike <$1500<$3000

I'm going to put a lot of miles on this thing from using it for commuting, for one-day rides mainly on road or packed gravel, and for hopefully 1-3 backpacking trips each year (likely not on anything too rough). I can't see myself ever caring about speed but comfort, durability, and handling are all important.

Based on my research, models that are catching my eye are:

• Surly Straggler GRX 610
• Surly Midnight Special
• Salsa Warbird
• Salsa Journeyer

What am I missing? What would you recommend? The more versatile the better! (6'2"/180 M)
