As far as I know, any Shimano 12 speed chain will work with any Shimano 12 speed casette and crank, there will be slight differences in weight but thats about it.
I could be wrong on this but I use a shimano deore level chain with a 105 level 12 speed casette on my road bike. I also use the same type of chain with a cheap AliExpress 12 speed MTB casette and ZRace crankset

Shimano does a really good job at good, better, and best.
Here we have good, and better. Both will work great. What you’ll get out of the XT is a higher quality metal, which, will last longer, and resist corrosion, over the 6100. If you go up to the 9100 series, you’ll get both of these qualities, in a lighter package.
The 8100 is a fantastic middle ground. Go with that. However, if you really need to save that $17, the 6100 will work just fine. Though, you’ll get slightly worse millage.

I would run an XTR/Dura-Ace chain on any 12 speed HG+ bike. It’s worth the premium.
