Considering making this a 3×1 since it will primarily be for family rides and getting around town. Anyone have thoughts on that?

Beautiful color! If you’re going 3×1, I’d spend a lot of time in the front middle, then pay attention to which rear gear you’re mainly using for cruising along by yourself. That should be a good way to figure out which SS cog to go with.
That being said, you could just not shift the rear, and tada it’s a 3×1. And in that case, why not just keep the gears and have multitudes more range?
I am opposed to 3×1.
If you’re in SoCal, I’d be interested in taking this big-boned lady off your hands, to save her from your outrageous intentions.
