Recently switched to 54-40 chainring in front and running 11-34 in the back. Does the chain look too short? If so, would a 126 link shimano 12 speed chain work or would more links need to be added?
It’s too short. A 126 will need to be trimmed to size. Follow shimano’s sizing instructions which are basically put the chain on big front, big rear, outside of the derailleur, and add two full links.

you need to look up the chain sizing manual provided by the manufacturer, they explain to you how to size it.
since you didn’t specify your configuration/setup of your drivetrain, i’ll assume it’s a Shimano derailleur: https://si.shimano.com/en/

Be careful of not snapping your di2 derailleur like that $$$
