No problemo! I used an old Bianchi Incline mtb for years for touring. This bike should be fine for paved touring, but you should definitely load it up and take it up some hills. The only modification you may need is lower gearing (either via smaller small chainring or lower gear in back – see what your derailleurs can handle. Have fun!

I did 5000km through europe last summer on a significantly less comfortable bike (25mm tires, race geo, loaded with front and rear paniers). This would be a dream in comparison. The answer is: absolutely.

My only slight concern might be the handlebars since they really only offer one hand position. But only you can tell if that is a problem for you.
