I’m fixing up my old mountain bike, my girlfriend’s dad is giving me his old fork. However my bike is from 2015 and doesn’t have boost spacing on the front, and it’s also centre lock, it’s fulcrum red power 29 wheelset.
Are there adaptors that do boost with centrelock or am I sunk?

You can’t easily make a boost spaced hub work on a non-boost fork.
That would be a hard adaptor to make compared to six bolt. You could maybe stack six bolt and boost adaptors and buy a new rotor but a new center lock boost front wheel may be your best option.
Edit: https://problemsolversbike.com/products/booster-hub-spacing-kit-center-lock-front plus a new six bolt rotor would be an option
