Chicken Piccata is a quick and flavorful dish made with tender pan-seared chicken and a bright, buttery lemon-caper sauce. A little Italian, a little Italian-American, and a whole lot of comfort.
Let me show you how to make a quick chicken picata with a light and creamy sauce. To save some time, you can get yourself some pre-cut chicken cutlet or you can butterfly chicken breast like I’m doing here. Lightly pound to even out the chicken. Season with salt and pepper and dredge the cutlets in flour. Shake excess off and saute 3 minutes per side on a skillet with hot oil. Try to get it golden brown on both sides. Now set the chicken aside and in the same skillet add a bit more oil. Fry the shallots. Then add dry white wine and let it reduce for 2 minutes. Add broth, lemon juice and capers. Let bubble for three minutes. Then lower the heat and stir in the cold butter. For a thicker sauce, stir in a teaspoon of cornstarch mixed with three tablespoons of water. Now add the chicken back into the pan and spoon the sauce over the top. Garnish with chopped parsley and lemon zest and serve it right away. We just did this on a simple kachu pepe and it was so good. Easy, right?

Take it from someone who has made this dish many many times. Take yourself half a lemon, and slice it paper thin, and cook it right in the sauce for about 5 to 10 minutes. Don't remove the lemon slices, but serve them, in the sauce, over the chicken. The lemons will break down enough that they will eat nicely and easily, and lend an incredibly bright and flavorful contrast to the overall dish. You're welcome.
I might try this with tofu or tempeh. I used to make the chicken version before I was vegan.

1. Don't speak everything like …take out the chicken, turn it, roast it, shallow fry, rinse it …..try to speak little
