Does anyone know how to fix this? Please watch the video to see what I'm referring to. It scared the crap out of me on a downhill, sounds like my tire hitting something but it's definitely something in the hub. Is this easily fixable from home?

take hub apart, clean, lube, reassemble.
hubs can actually be quite different from each other, but all will do this when the freehub to hub shell interface gets dirty, draggy, or dry.
Ideally, inspect and clean the freehub. On some hubs, you can remove the cassette by hand to access it; others require a cassette tool. Clean everything thoroughly and apply a light lubricant.
either needs servicing or replacement, do your research and look up the manuals from Shimano: https://si.shimano.com/en/manual/search?series=DEORE%20XT&component=Freehub%20(Disc%20Brake%20(Thru%20Axle))
