I left my Mtb in the garage for the whole summer and now it is time for some preparation. I will renew the sealent but should I peel all the old layer or is it ok to have a very thin layer almost all around the tire?
It never hurts, doesnt have to be clean or anything but ide rather start a bit new.
Usually.if im just refilling mid season though I won’t take off the tire nor clean, just throw some in and call it a day

You can clean the old residue from the tire and rim with some isopropyl alchool (70%-90%) and a soft brush or with a mix of water and dish soap, a soft brush, and some good ol’ elbow grease.
Having a clean surface is important with tubeless setup because the residue can get in between the rim and tire and cause it to not seal correctly and cause a leak (big N fast or small and slow).
If you kept your tire on with a good pressure (enough so your tire isn’t flat) you could simply add some more sealant.
It is recommended to add some sealant every 6-ish months by many manufacturers.

Just leave it on. That latex has sealed porous areas of that tire.

Dried sealant is still doing its job and it may be holding old punctures sealed as well as help new punctures seal faster. Even if it wasn’t there is no benefit in removing this amount of it. Only remove big clumps if there are any, especially around the bead.

At least clean the bead from any dried sealant, but do it all. if not you’re in for a lot of headache, maybe. I tried it before and had to clean them to get them to hold air.
