From what you read Lefty forks are miserable to get serviced and past a certain age are a lost cause. I have no first hand knowledge but if I were considering a bike with a lefty I would look into service parts and service availability in detail.
Also MTB to gravel bike conversions frequently end up with wonky geometry so I certainly wouldn’t buy anything without a fair bit of test riding.
