Well, this is more of a TT bike, but it is fine as long as it works for you.
The bivvy – well, condensation, the size, the fact that you would not be able to do much inside of it besides sleeping. If it works for you, why not.
You probably would need more water. Options: feed bags, anti sway saddle bag stabilizers, undertube, water packs.

You forgot handlebars. You might have to refit the front rack.

I use a similar set up with a bivy like that. I recently did 9 days. It works if you’re willing to be ok with being light. Can always stop at a hotel or bed and breakfast for the night.
