I just added some new tires and a chain to my old bike. I’m not sure if I put the chains on correctly because it keeps making a jerking sound every couple seconds when I’m riding it.
Looks alright to me. The thing with new chains on old casettes/chain rings is that different amounts of wears usually mean it’s not gonna run properly. So give it some time to wear in, if the noise persists you need to look into it further.
Also, the ould chains are stored in before being sold is much thicker and not meant for riding. So I hope you cleaned it properly after unboxing and then put on chain lube

Going by your description of intermittent clunks, check your missing link /chainlock if it’s closed securely. Might be the lock isn’t fully engaged and thereby causing noise/ mishaps
Otherwise as already mentioned, new chain and partly worn cogs need some time to wear in
