  1. He’s not trying to sharpen this knife, he’s simply resetting the edge. This will extend the life of the knife and save you time by not having to sharpen the knife so frequently. Often the edge of a knife will roll with use, giving the impression that it needs to be sharpened.

  2. Hey thats not how to "sharpen" thats how you hone your knife after you sharpen it. That just refines the kinde edge to be a dot toothy, lol, its like a learther strop, so the lighter you do it the better as well, if it were sharpening, youd see metal shavings build up real fast

  3. I worked in restaurants for years and I can tell you that A steel doesn’t sharpen a knife.
    I think it keeps the blade aligned but to sharpen the knife you need to run it on a wet stone.

  4. I do not know why people still use that thing. It's been proven under microscope that it doesn't do anything for a knife. In fact, it worsen the knife because you will NEVER keep the angle of the knife the same compared to grinding it on a wetstone.

    Go and look up some video on expert knife sharpener. For example; OUTDOORS55. He deep dive into the microscope to tell you exactly what apex on a knife looks like.

  5. Theres no metal sprinkles in anything. Hes not sharpening the knife and removing any steel. Hes honing the blade and standing the edge back up. If the edge gets chipped there no way to put a new edge back on the knife with a honing steel. That steel only realigns an already good edge.
