I'm looking to change my 10+ year old tiagra groupset to a 105 groupset. I've seen videos of it being done. But just want to be sure before I buy anything. Are these spacers between the cogs? Or just how the cogs are. Or is the spacing between cogs on the 11 speed thinner that it just fits? I've read the chain on an 11 speed chain is thinner than the 9 speed so maybe that makes up for 2 extra cogs space?

11 speed cassettes onto 8/9/10 freehubs is…complicated. Depends on the specific cassette and freehub. For road, in general, you should expect them to be incompatible so should look at whether an 11 spd freehub is available for your wheelset.
10 speed, however, should work fine. I personally would probably put a Sram groupset on and take advantage of the compatibility with [their mtb derailleurs](https://www.universalcycles.com/shopping/product_details.php?id=75820&srsltid=AfmBOooCoFN9G7VeJ2fbTklmQdzLaAS17DBtrP1I0CF6Z_AA0EZEjeNi) to put a wide range (11-36) cassette on.
I did the 10spd upgrade for $175 , tiagra shifter, 105 r7000 RD , 11-36t cassette , and a new chain
