Hello, I have a endurace CF 7 in size 2 XL. I wanted to know if it was possible to simply remove the spacers to get into a more aerodynamic position? Of course, the pipe would need to be shortened in the future. Or did I overlook something in my way of thinking?

That’s what they are for. You will need to shorten the steerer tube directly though.
It is somewhat of a misconception that a lower position is a more aerodynamic position. Look at TT bike nowadays, the stack is very high. In some cases a higher stack is more aerodynamic. If you are comfortable on the bike I would leave as is 🙂
Only worth it if it is more comfortable. Get a bike fit before chopping the stem.
