When leaving Amsterdam to the north i would say go via Durgerdam, Holysloot, Monnickendam and Edam to see the old fishing villages om the water. But all in all seems like a cool route!

I would def go to Giethoorn, its a bit after the Ijselmeer crossing. Beautiful pittoresque no-cars village. Wish i would have go there but i took another route
