Might be the wrong adapter. Are you sure it’s not flipped?

You might have to flip the adapter that connects the brake to the frame. If it’s oriented in the wrong direction the brake will be too far away from the discs

Rather then too small rotor you probably have too many spacer or wrong (or wrong installed) adapter.

I concur with the others. Caliper mount adapter is either for a bigger rotor, or installed the wrong way.
Getting that sorted is your least expensive option – it may cost you a few minutes to flip the adapter, or if you need a different one, ~15 bucks or so. You’ll need new pads whatever you do.

Check that the carrier bracket isn’t upside down. Ask me why I know this?

Edit; 50 minutes and this community solved my issue. Turns out I add one too many adapters on my frame. Still needs new pads. Brb, on my way to the LBS.
