The brakes work fine and it doesn't seem to limit movement, but the cable looks a bit too short aesthetically, did they cut it too much?

Depends on the integration and if the brake hose is ending in a nice bow.
If this is a new bike, that’s how long it was when it was taken out of the box.
If it doesn’t limit movement when turning, you should be fine.
