So I did it and finally also got into gravel cycling by buying this Cinelli Zydeco: https://www.bike-components.de/de/Cinelli/Zydeco-Shimano-GRX-2×10-Gravelbike-p95318
I'm 1.75m tall and so according to Cinellis size table I fit right in between M and L frame size. I chose the smaller one and went with M (54cm). But when riding, it still feels too large. I already replaced the stem with a smaller one (7cm instead of original 10cm) and adjusted seat height.
Any advice? Are there people who just need to choose even smaller size?

Advice: try before you buy.
Without a pic or more specificity, it’s hard to suggest a fix or assess what too large means. At 175 a medium “should” fit you but no one knows if you are leg long or arm long or torso long. This is a pretty race orientated bike though.
You shortened the reach already so I’m going I’m gonna go out on a limb here and assume it’s too slammed, aka the stack is too low. You might want an angled stem at 12 or 17 degrees, which would raise your arms up and bring them back a bit. You can play around with the effect here: [http://yojimg.net/bike/web_tools/stem.php](http://yojimg.net/bike/web_tools/stem.php) or in more depth here: [https://www.bike-stats.de/en/vfitting](https://www.bike-stats.de/en/vfitting) you can take your measurements, load the bike, and then tweak aspects of the parts with animation.
Shorter cranks.
Even better, get a bike fit.
What do you mean it feels large ?
