Unless you have the necessary tools and a tolerance for frustration, just take it to a local bike shop.

You shouldn’t have any trouble getting just a shift cable back past the BB shell, however the easiest way to do it is to remove the BB, route your cable, and then reinstall the bottom bracket.
The way I would approach the repair without doing that would be to undo the bar tape, remove the cable from the shifter body.
If canyon does full cable housings internally for their cable actuated bikes, I would secure just the damaged shift cable to the handle bars. If canyon uses multiple sections of housing here, remove the shifter cable housing, and like above, secure the shift cable to the bars with some tape.
Remove the cable nut on the rear derailleur.
If canyon does a full housing, I would now carefully pull the cable housing off of the shift cable, leaving just the bare shifter cable in the frame, secured by tape to the handlebars. If they do a section of housing, just remove the section.
Now, i would slide a PTFE inner housing liner (the inside tube of a shifter housing), over the end of the cable and through the rear of the bike frame. It should follow the path of the existing cable, and go all the way up it until it comes out at the front of the bars.
You can now remove the tape securing the shifter cable to the bars.
Being careful not to pull the ptfe tube out of the frame, pull the damaged cable out of the PTFE tube, leaving yourself a nice cable guide.
Install the new cable in to the shifter.
If canyon uses sections of housing, install the section that meets with the shifter now.
Run your new shifter cable in to the PTFE tube, all the way until you see it poking out the rear of the bike.
If you’ve got the cable out the back end, you can now safely remove the PTFE tube.
If canyon uses full sections, or partial sections of housing, you new will install the section of housing that meets with the rear derailleur, and slide it over the end of the new cable, and in to the frame.
Tighten down the cable, and do up the nut.
The whole process if done right should take 20-30 mins.
