hey, im reading my way into gravel and until now only rode mtb bike, so please dont have if the question is obviously stupid.
if i understand correctly you shift the rear derailler with the right lever and the front derailler with the left lever. so what is the use for the left derailler (image 2.) if I ride a 1. drivetrain system ?

No use for the left lever, just comes standard in case you do add a front derailleur.
As I recall the buttons can be programmed to do whatever. So if you wanted, you could set up the right buttons to shift down and the left buttons to shift up, like how Sram does it.
Whatever you program it to do. You could change it so it’s left and right lever to go up/down if you wanted (like sram does), mirror the right lever, change your computer screen… Bust out the e-tube app and look
As others have said, you can use it for a number of things. The new grx825 groupset comes with 1x dedicated levers where the left lever has no buttons (BL-RX825-L). Though they announced it, it’s not actually available at the moment.
You can make the buttons do whatever you want. My 1x set-up was all the right buttons shift up, all the left buttons shift down.
On my 2x set-up, my bigger buttons shift the rear derailleur and my smaller buttons shift the front.
The world is your oyster here.
