I’ve been interested in the tour divide for a while now and eyeing the Salsa Cutthroat, but I also enjoy gravel racing, but don’t have the money to buy two different carbon bikes. Would racing the cutthroat be obviously bad on a “shorter”gravel course?

Run what you brung.
I’d rather race gravel on a cutthroat than ride the tour divide on a gravel race bike. It’ll do fine.
