Don't really know what to say about the tape, will Canyon do anything about this if I contact them?
Just got my first new bike, Grail CF 7 and apart from this issue, my first very short test ride my breaks didn't really feel strong as expected (worse than my old rim break bike tbh), do disks need some break in time?

I would absolutely not accept the bar taped like that. Not sure what they’d do about it though. Shipping the entire bike back and forth seems excessive, maybe you can have a local bike shop fix it and have canyon pay for it.
Either way, let them know and have them figure out a solution that works for you.
Send the bike back.
Contact Canyon, they are pretty good with figuring out stuff like this. I imagine they would have it fixed for free of charge in an authorized LBS near you.
Brakes, yes, you %100 need to break them in, but not with time. You just go out there and actively do it.

This integrated headset is way different from mine. It should have a place for a gear groove.
