  1. You can remove one side of the Canti cable to open up the brake for easy wheel removal. V brakes can do this too.

  2. Disclaimer: I’m an big noob at bike stuff, but if you convert the front to a mini v-brake you can disengage the noodle to remove the front tire quickly.

  3. Even with brakes unhooked with wide tyres a lot of the time you do have to deflate to get past the pads. Rivendell are meant to be bringing out their own v-brake that solves this issue

    V brakes would be easiest and quickest to detach the noodle and boot from the brake arm

    Magura hydraulic rim brakes usually come with a quick release lever that lets you get the whole thing off the canti post in seconds to remove the wheel.

    Assuming your tires can fit past the brakes, but you’re having trouble squeezing the brakes together enough to unhook the cable from the canti, you can get this.

    Instead of using the cable stop in the stem, you’d terminate the cable housing on this. The little lever arm allows you to slacken the cable quickly. And it gives you a barrel adjuster for fine tuning the brakes, too. It would also give you the freedom to replace the stem without having to hunt down another old one with a cable stop.
