Based on your height and inseam Large would be the size I’d choose. It also looks right on you. Photo #4 looks like you can actually reach the ground while on the saddle. That’s small in my opinion. Which do you feel better though?

Based on your posture, I would go for L. In M, your lower back is hunched or curved. It is better if your lower back is straight (even at angle and not vertical).
Except your last photo seem to be reversed.

Your saddle isn’t high enough. Your leg is still quite bent at the bottom of the pedal stroke. You should set your saddle height so that your leg is almost straight with your heel on the pedal, at the bottom of the pedal stroke. You should just be able to touch the ground with your toe when sat in the saddle.

When in doubt, always go with the larger one. I went with the smaller one and now I pay for it every time I take a corner and drag my petals.

I spent way too much time watching the first gif trying to tell the difference between the bikes. Anyway, to me the larger one looks like a better fit based on watching your pedal stroke and leg extension.

Especially if you’re new to gravel/road biking I’d definitely recommend you to take the L size. It will be much more comfortable on longer rides.
