It appears you are looking for bike fitting help. Please make sure you post as screenshot of the Canyon size chart for your bike, with your point in it. See [this example](https://imgur.com/a/ALUfXyy)

As advised by Canyon, S. Do you have trust issues?
You can only take S. If it will fit you well is a different question. You can’t insert the seatpost deep enough on the M. So you can ride a S, you can buy a S and a longer stem or you get a bikefit & recommendations what bike might fit you better.
Sure you measured right?
Could look into a longer reach bike, or a bike that allows you to choose a longer cockpit right away.
