I'm currently looking at getting the Canyon Endurace All Road, but I'm a bit unsure about the right frame size. I'm 200.5 cm tall (around 6'7") with a 93.5 cm inseam.
According to Canyon’s size chart, I'm kind of on the borderline XXL. I’d love to hear from anyone around my height and inseam length who’s bought this bike, what size did you go with, and how does it feel in terms of fit and comfort, especially on longer rides?
Also, if you've made any stem or seatpost adjustments to make it work better, I’d really appreciate the input. Trying to avoid the hassle of returning the bike if I pick the wrong size.

I am nowhere near your size but you often hear that, especially if you are inbetween two sizes, you should go for the size smaller. It is a lot easier to fit a smaller bike to a bigger person than a bigger bike to a smaller person. So short answer; go for XL
You’re squarely in 2XL range.
I’m 193/95 and can ride both XL and 2XL with no problem, now you are 200 so definitely go for 2XL because of the reach.
Hovering at 194-195cm and I ride an XXL with no issue, BUT I will get an XL next time purely for better fit options.
I’m 195 cm (91 cm inseam) and bought the Endurace CF8 XL with a 100 mm ST0035 stem. So this is just a recent experience with Canyon sizing more than actual help with the All Road.
I think the XL frame and saddle height is about right for me – my knees and hips are fine and I feel like I’m engaging my muscles like I’m supposed to on longer rides – but I’m thinking about buying a 80 mm stem as my grip falls a bit on the short side on the bar (which is horribly wide for most on the XL at 420 mm but fits you and me). Interestingly, the All Road is sold with a 80 mm stem!
I feel like I’m extending just a little bit when upright and I think Canyon installed the levers 1 cm to far out on the bar. I might still do a bike fit but at 250 Euros I might try the shorter stem and repositioning the levers first as I feel that would fix it for me and it’s just 50 Euros for the stem.
Not sure that the price of the All Road justifies a bike fit, though.
