In theory yes. It’s got a hyper glide hub so you should be good to drop another 8 speed HG cassette into it. The limitation will be the rear derailleur. At some point if you go a bigger range on the hub you’ll need a longer cage derailleur. Switching it out is easy enough, but you’ve got very little ground clearance as it is, so a longer cage might be an issue.

Shimano website for that derailleur (listed on the page you linked) says that the max range of that rear derailleur is 11-34. Shimano derailleurs are known for often being able to accept larger rear cassettes than their spec, as long as you adjust the b-screw correctly. So I’d wager an 11-36 or maybe 11-38 would fit.

You can also buy something like a Wolf Tooth Roadlink which will move the derailleur slightly and allow for a bigger cassette.

All that said though, if you don’t find yourself in your fastest gears that often, I’d look to reduce the size of the chainring first, it’ll be easier and you won’t have to deal with any potential compatibility woes.
