First pic, lever on the left shifts the front, lever on the right shifts the back, they’re called downtube shifters and are very common on old road bikes.

Friction shifters. move the levers while pedalling and you can “feel” when the gear is about to shift. if you’ve overshifted/between gears, just continue to the next gear or move the levers back to give the deraileurs back enough tension to stay in the gear.
like others have mentioned, they’re not indexed so they’re entirely analogue/by feel, which honestly i kinda like the experience. it’s a bit more involved than modern shifting, so maybe get a feel of it on quiet roads first.

Does the left shifter have a cable? I can see the ends but nothing running from the shifter to the derailleur
