Gotta get your weight forward, over the bars. Leaning back like that off a jump face will send you over the bars on a bigger jump.

You aren’t pushing through your legs on the take off. You get low and extend a little as you come up the lip, but it looks like it’s mostly just your upper body. Move to smaller jumps and try to go as slow as possible and still clear them. the only way to do it is to push with your legs into the take off. It shouldn’t be a jerky, or fast motion, just gradually extend your legs so they are perfectly straight as the back wheel is leaving the lip.
You get bucked on the second jump because you aren’t doing this. the first one looks okay, but you are relying entirely on speed.
I’d also recommend learning how to bunny hop on flat ground. The motions aren’t exactly the same, but there is some very helpful carry-over , especially in learning how to hold the front wheel up higher.
