Please help! The bottom spacer- called the transition plate, with screw- on my Ultimate CF SL 8 disc cracked (second and third pictures). Replacements are currently unavailable from Canyon in the US, so I installed the set from my Endurace CF SL 7 (first picture). Same specs for the same dimension steerer, just a different shape and no screw at the bottom. The handlebars are torqued to spec- 5nm, and to be honest it feels more sturdy than what was on there (I had some play in the headset, which is how I discovered the crack). Is this safe to ride, with the Endurace stack in there? I don’t see any issues, other than the back of the handlebars looking a little ugly the way they over hang…

That should be fine to ride. Just a bit fugly until you can obtain a Canyon replacement.
If you have access to a 3D printer that is a good way to replace these parts as well.
