In my opinion m would be the right choice. Just like the sizing help said.
But nevertheless you can make this bike work for you.

Get a bike fit before spending thousands on a bike? Nah, let’s just ask Reddit and keep second guessing the sizing instead!

No, wrong choice. This sub is insane with their low size recommendations. I’m of a similar body size to yours and a few years ago I bought a bike that’s identical to endurace S in geometry. Canyon recommends me to go S, but I’ve just ordered my M a few days ago.

Why does your trainer looked slopped back?

Is it comfortable for you? Yes—perfect. No—have you made all possible adjustments to fit more like the M frame? If yes and it’s still uncomfortable, then too small. Otherwise, if you adjusted and it feels good for you, then perfect.
