HG hub means basically anything over 11t.

8 speed is compatible with nearly any HG (hyperglide) cassette up to 10 speed road or 11 speed mountain bike cassettes. Pretty sure Sram NX 12 speed also uses HG free hub. In other words, the only limit to cassette size is budget so long as the cassette is an HG one.
You’ll need to match the rear derailleur to the number of speeds you decide to go with. I’m currently running linkglide 11 speed on my mountain bike as it was on sale at the time and worked with my existing HG wheels. 11-50t is plenty of range for me as 1x.

I just did the same conversion on my older mountain with the same hub. I put a Shimano Deore 11 speed drivetrain (M5100) on it. Fits perfect.
