Read in the Brompton Bicycle book to grease the right pedal monthly. I tried for a good hour to get it loose, but to no avail. I’m lefty-loosely-ing it, even pressing the left pedal against my body, but it wouldn’t budge. The wrench started wearing away the edges of the bolt. What am I doing wrong? Am I even supposed to take it off? Maybe I should wear rubber-grip gloves for more grip strength?

You should lose the adjustable wrench for starters if it’s this tight. Your only going to make life more difficult if you strip the nut.
The Allen tex and hex end are directly connected, don’t turn the wrench and Allen in opposite directions.
Lubing the pedal isn’t worth ruining the pedal stop before you make things worse if need be. I am not going to disagree with what book you have, but I have never lubed my pedals
And wait why are you removing the pedals to lube them? I’m confused. Op just stop.
Spray threads with Wd40, leaving it on its side for 30 mins/ an hour. Then firmly tap hex with a hammer and it should budge. If no joy, repeat wd40. If no joy after that, drill it out.
