Rather than paying a shop, I want to be able to work on my bike more. I deal with constant skipping when pedaling hard— bigger guy. Is there any tuning etc I can do myself?

You can do it all yourself. Just watch park tool videos, specifically on tuning your rear deraileur.
I’d also watch some berm peak videos. The earlier ones he does show how to videos.
Derailleur and shifting tweaks are easy but it needs to be done right. For instant feedback, your bike needs to be off the ground so that you’re able to move pedals and shift the gears. Barrel adjustment and Low-High limit screws are what you’ll have to adjust. The top pulley wheel (of the derailleur) shall be aligned in a straight and orderly fashion with each cog, if it’s not then you’ll get skipping/slipping ( which you have)
