I’ve just bought this bike and I’m not sure what type of bags would be best for it? I’m looking at 7-10 day trip.
I’ve had a pannier rack on my old bike but I keep seeing other people do saddle bags. Just wondered if it’s a personal preference or a frame requirement?

Ah Bikepacking vs. Bike Touring, the age old debate.
Depends how much you’re carrying, what surfaces you’re riding on. If you’re sticking to tarmac, get a rack and panniers. This bike doesn’t look like a touring bike, I suppose you can fit a rack on the back though you’ll need to find a way of attaching it to the frame near the seat post.
You can’t get much in seat post bags, it’s not clear how easy it would be to mount stuff on your bars and in the frame.
Edit – I just found some more pictures of the bike, it’s not going to be straightforward fitting a rack.

It’s mostly a matter of preference. Some frames will be picky about which racks they can take and some racks are made for one particular bike. But in general, most racks fit most bikes with the correct fitting kit.
I use and recommend bikepacking bags, even for long tours. That’s my preference. I have a pannier rack that I could fit to my gravel bike, but I never did … I even have very nice panniers. Maybe I should sell those actually.
