When do you need Judy Gold vs a SID SL bike?

I want to buy my first MTB, to ride some woods and local hills. We don’t have moutains in Belgium so most challenging woud be this:

Can’t figure out if I really need all the extra stuff that comes with a higher tier bike. So at what point do you need better brakes MT400 vs Deore , rims WTB STX vs 32h , TranzX dropper & front suspension Judy Gold vs SID SL? (Also most parts seem to be made for OEM?)
