I'm trying to swap some used SPDs on my 1983 Jordi Amat (Solida cranks), and even though the metric size is 14*1.25 for both, the newer pedals won't screw in. Am I missing something?
Most pedals are 9/16 imperial, which is very close to that metric, but possibly not close enough

But older bikes made for the French market used a slightly smaller thread:
14 mm x 1.25 (.551″ x 20.32 TPI)

Have you mixed up the sides?
If they was mine I’d use taps and MAKE them 9/16”
