Starting may 19 a road trip to Vienna. I planned the route through Maastricht, Aachen, Saarbrucken, Strasbourg, Donauschingen (where the Donau springs) and along the Donau to Ulm, Regensburg, Passau, Linz and finally Vienna. Nearly 1800km and 15000 altimeters. Planning on 3 weeks easy cycling and lots of Sachertorte.

You should consider the slight detour, taking the [https://www.vennbahn.eu/en/](https://www.vennbahn.eu/en/) and going through Luxembourg.
This might make the tour too long, but I would also consider swapping some of the Danube-riding for the Austrian Alps. You could ride the Eurovelo 14 from Zell am See to Bruck an der Mur, and then onto Vienna. The state of Salzburg is very pretty.
I don’t know if you speak Dutch but it might be as you’re starting from the Netherlands. If so, I can recommend the cycling book of Cycling Europe (Zwarte Wouden Route). This route goes from Maastricht to the Bodensee and follows most of the route you mention up until Donaueschingen. I cycled this route before and it is really clear to follow and also takes a bit of the Vennbahn mentioned in another comment.
